Challenges Worldwide can recruits and trains volunteers to work with partners in developing countries. As a law student you could come across opportunities to work for a law firm abroad.

If you’re looking to go further afield, Idealist allows you to search for international volunteering vacancies. Similarly to Do-it you can also search for vacancies within the areas of human rights and civil liberties as well as law and legal assistance

Projects Abroad

Projects Abroad have an entire section dedicated to international law and human Rights voluntary work placements. In some cases they even offer placements to pre-university students considering studying law.
